Beetroot Blast Smoothie

Beetroot Blast Smoothie

Ingredients:

¼ small pineapple

½ raw beetroot

½ cucumber

Juice ½ lemon

Handful of spinach

½ avocado

Handful ice

Method:

Juice all the ingredients (except the avocado and ice).  Place the juice into a blender and blend together with the avocado and ice.

Berry Hemp Smoothie

Rich in protein and antioxidants.

Ingredients:

Berry Hemp

2 handfuls of berries e.g. blueberries, raspberries, blackberries

1 handful watercress

1/3 cucumber

1 dessertspoons hemp seeds

1 dessertspoon pumpkin seeds

1 dessertspoon hemp protein powder

1 dessertspoon coconut oil

1 teaspoon Berrylicious

Approximately 1 cup coconut water (or you can just use water)

Wiz all the ingredients together.

Blueberry-Cacao-Cashew Creamy Desert

Blueberry-Cacao-Cashew Creamy Desert

A very, very delicious treat – and it’s nutritious!

Very easy to make – approximately 10 minutes.

 

Ingredients:

½ cup Chiray desiccated coconut

3 tbsp Chiray cashew nuts

1 tbsp Chiray cacao powder

1 cup blueberries

1 tbsp Chiray Lucuma

1 tbsp Chiray coconut butter

Water to mix ¼ to ½ cup

 

Method:

1. Put desiccated coconut and cashews into a blender / processor and blitz until well broken down to resemble breadcrumbs.

2. Wash the blueberries and add to blender.

3. Add lucuma, cacao powder and coconut butter (if solid cut into small pieces suitable for your blender).

4. Blitz all these ingredients until well mixed.  If the blender finds this difficult start to slowly add the water now, otherwise blitz first and then slowly add water until a lovely creamy consistency is reached.

 

Serve on its own or with fresh berries, coconut flakes, cacao nibs and top with yogurt or cream.

 

 

 

Buzzing Chocolate Shake

• Milk / Milk Alternative (amount depends on how thick you want it – you can also do ½ milk and ½ water)
• 1 dessertspoon bee pollen
• 1 dessertspoon maca
• 1 dessertspoon raw cacao powder
• ½ tsp Lucuma

Shake in a jar or protein shaker or blend with a hand blender. 

Allow some time for the bee pollen to dissolve before drinking – shake again just before drinking.

Cacao - Coconut Schmoozzzzzz

For 2 people

Takes just 10 minutes!

This is a delicious creamy, chocolaty desert, easy and quick to make and wonderful to share 

 

Ingredients:

½  cup Chiray Desiccated coconut

½ cup Chiray Goji Berries

1 tablespoon Chiray Lucuma

1 tablespoon Chiray Cacao powder

2 tablespoons Chiray coconut oil - melted or cut into small pieces suitable for blender

Filtered Water - approx ½ cup

 

Method:

1.  Put desiccated coconut and Goji’s in blender/processor and blitz for approx 20 seconds until well mixed.

2. Add Lucuma and cacao powder to blender and blitz for a few more seconds until mixed.

3. Cut coconut butter into pieces suitable for your blender and add this to the mixture and blitz for a few more seconds.

4. Continue blitzing and slowly add water until you have a thick creamy consistency.

 

Serving suggestions:

Serve on its own or with blueberries , raspberries and perhaps yogurt or cream. You could even top it with cacao nibs.

 

 

 

Chagalicious Tea

Ingredients:

1 heaped teaspoon chaga 

2 cups of boiling water

¼ tsp vanilla

1 tsp maca

½ cups hemp seeds

1 tsp agave

1 cup almond milk

Pinch salt


Method:

Place the chaga into a teapot and pour over the boiling water.  Leave to steep for about 30 minutes if possible.

After the chaga has steeped add all the ingredients into a blender and blend (be careful putting hot liquids into a blender – blend on low).

Chiray Maca-Chino

• Milk / Milk Alternative (amount depends on how thick you want it – you can also do ½ milk and ½ water)
• 1 dessertspoon natural yogurt
• 1 heaped dessertspoon maca powder (WARNING!  - start with a tsp and build up to this amount over a period of time)
• 1 dessertspoon hemp protein powder
• 1 level teaspoon Lucuma powder
• 1 tsp bee pollen

Blend all these ingredients together with a hand blender – this will give you the frothy topping!

Chocolate Moose

Chocolate Moose (chocolate mousse with antlers!)

 

Ingredients:

1 small avocado

15 g cacao powder

¼ cup water

15g lucuma

2 tsp agave

Heaped tsp coconut oil

 

Method:

Place all the ingredients into a blender and blend until smooth – so simple and utterly delicious.

You can get creative with a topping of chopped nuts, crushed cacao nibs, chopped fruit etc.

Deliciously Devine Raw Chocolate Recipe

You will need: 

·        a small pan

·        a heat proof bowl

·        chocolate moulds – you can buy these from most cook shops or online.

 

Ingredients:

·        50g raw cacao powder

·        50g raw cacao butter

·        20 – 30ml agave nectar (more if you like it sweeter)

·        2 heaped tsp Lucuma

 

Method:

·        Place some water into the pan and heat.  Place the bowl over the top of the saucepan (make sure it’s not touching the water).

·        Place the cacao butter in the bowl, remove from heat and melt.  Once melted stir in the agave nectar, cacao powder and Lucuma.  Keep stirring.

·        Mix in any extra ingredients (see below) and then pour into the moulds.

·        Place in the fridge (or freezer if you’re in a hurry) and allow to set.

·        Turn out of the mould and indulge in the most delicious, raw, mouth-watering treat!

 

Get creative:

The above recipe is a basic raw chocolate base, you can then add a wealth of yummy additions – let your imagination go wild!

Easy Energy Balls

Easy Energy Balls

Ingredients:

2 packets Chiray Chunky Mix snack pack.

15g hemp protein powder

2 x heaped tsp maca

1 x heaped tsp lucuma

2 teaspoons Berrylicious

Pinch salt

2 tbsp coconut oil – melted.  An easy way to melt coconut oil is to put it into a cup and then place the cup into a bowl of hot water.  It only takes a few minutes to melt.

 

Method:

Place all the ingredients into a blender except the coconut oil.  Blend until the nuts are well broken down.  

Place the mixture into a bowl, pour over the coconut oil and mix in well. You may need more coconut oil if the mixture is still quite crumbly. 

Scoop out about a dessertspoon of the mixture at a time and roll into a ball.  

Place into the fridge to ‘set’.

Energy Seed and Goji Bars

Energy Seed and Goji Bars

Makes at least 16 Bars

Tastes good, easy to make, very nutritious and perfect for snacks

 

Ingredients:

½ cup Chiray Pumpkin seeds

½ cup sesame seeds

½ cup Chiray sunflower seeds

½ cup Chiray goji berries

½ cup Chiray hemp seeds

1 cup sultans or raisins

2 tablespoons Chiray cacao nibs

75g Chiray coconut oil

2 tablespoons olive oil

 

Optional extra

1 or 2 tablespoons Chiray agave syrup (avoid if on the Chiray health & weightloss programme.)

 

Method:

1. Melt coconut oil in a bowl over a bowl of hot water

2. Put sunflower, hemp, sesame and gojis into blender/processor and blitz until well mixed

3.Tip into large mixing bowl

4. Blitz cacao nibs for 15 seconds

5. Add pumpkin seeds, sultanas and melted coconut oil and blitz until well mixed

6. Tip this into the mixing bowl with the other blitzed ingredients.

7.Add the olive oil and agave syrup to the bowl and mix all the ingredients together by hand until you have a firm sticky dough.

8. Firmly press the mixture into a tray approx 15cm x 25cm and leave to chill in fridge for a couple  of hours.

9. When set cut into “bars” - one cut lengthways and 8 across.

 

Get Up & Green

Get Up & Green

This is a great way to start your day as this smoothie is rich in chlorophyl and will encourge a healthy pH and promote detoxification. It's also the easy way of bumping up your daily intake of fruit and vegetables.

If you are on the health programme this is optional but it’s a fantastic way to supercharge your health.

 

2 tsp of SuperGreen mix or 1 desertspoon of spirulina

1 dsp goji berries (these are best soaked in water for an hour or so to soften them) 

½ avocado

½ apple

2 big handfuls of green leaves (e.g. lettuce, kale, cabbage, watercress, spinach etc)

Chunk of cucumber

Juice of ½ a lemon

Water – approximately ½ litre (depending on the thickness you like)


Place all the above in a blender and blend until smooth.

 

The easy option!

If you are in a hurry a quick option is to mix a teaspoon of Chiray Supergreens and a teaspoon of Chiray Berrylicious into some water or a little juice. At least you start your day with a boost of superfoods.

 

Green & Raw Soup

Serves 4

Ingredients:

4 sticks celery – chop

1 lettuce – chop

1 avocado

2 cups broccoli florets – chop into small pieces, don’t use the stalks as the blender won’t like it!

1 cup spinach / watercress / rocket / lettuce

2 cloves garlic

2 tbsp olive oil

2 tbsp shelled hemp seeds

2 tbsp spirulina

1 tsp sea salt / Himalayan rock salt

½ cup water

 

Method:

1. Put water into the blender.

2. Add avocado & lettuce – blitz

3. Add the garlic, oil, seeds, spirulina

4. Add the celery & broccoli

 

If it’s too much for your blender, pour into a mixing bowl and do in stages (just make sure you have some liquid when blending the broccoli).

Serve with oatcakes with hummus / cottage cheese / feta cheese / nut spread / smoked salmon / chicken,

Green Time Juice

• Celery
• Cucumber
• Apple
• Spinach

• Knob ginger

Put all these ingredients through a juicer.

Incanana Slice

Ingredients:

200g coconut butter

100g Incan Berries

125g cashew ntus

250g sunflower seeds

150g desiccated coconut or coconut flakes

1 cup dried banana chips (unsweetened)

4 rounded tablespoons lucuma

2 level teaspoons vanilla powder

2 rounded tablespoons Berrylicious

Pinch Himalayan Rock Salt

 

For decoration

1 dessertspoon agave syrup

2 tablespoons chopped cashews

 

Method:

1. Melt the coconut in a double saucepan or place in a dish which is standing in a bowl of hot water.

2. Put the nuts, sunflower seeds, coconut flakes, Incan berries and banana in a large bowl and mix together.  This mixture needs to be blitzed either in a blender or food processor until it resembles breadcrumbs.  You may have to do this in several stages depending on the size and strength of your appliance.

3. Place the resulting mixture in a large mixing bowl and add the lucuma, vanilla powder, salt and Berrylicious and mix well.

4. Next add the melted coconut butter and mix to form a stiff dough. 

5. Press this into a tray approximately 9 inches by 10 inches and press down well.

6. Score or pre-cut to mark your slices.  It should make between 20 – 30.

7. To decorate brush the top with agave syrup and lightly sprinkle with chopped cashew nuts.

8. Place in the fridge for approximately 1 – 2 hours to set.

 

Liquid Lunch

Serves 1

Ingredients:

• 1 courgette
• big chunk cucumber
• 3 sticks of celery
• 1/2 beetroot
• ½ avocado
• Few ice cubes

Method:

Juice everything except the avocado and ice cubes.

Put the juice, avocado and ice cubes into a blender and wiz.

Maca-roon

If you are on the Chiray Health & Weight Loss Programme the portion size would be 2 macaroons per day.

Ingredients:

2 cups desiccated coconut 

3 dessertspoons hulled hemp seeds / or any nuts / seeds of your choice 

3 dessertspoons maca powder

1 dessertspoon Lucuma

Pinch salt

¾ - 1 cups milk / milk alternative

 

Method:

Pre-heat the oven to 150 degrees C.

Place all the ingredients into a blender and blend together to form a thick paste.

Spoon out approximately a heaped dessertspoon and mould into a ball in your hands.  If you are a raw foodie, these can be eaten raw and are fantastic little balls of energy!  

If you prefer to make more of a biscuit texture maca-roon, then flatten out the ball into a biscuit shape and place onto a baking tray lined with greaseproof paper.  Place in the oven for approximately 20 – 30 minutes (depending on the size you have made your maca-roon).  Leave to cool.

Extra treat alert!

 

N.B. If you fancy being a bit more decadent, you can add a couple of dessertspoons of raw cacao powder to the mix for a chocolaty maca-roon!

Nut Cookies

Ingredient:

1 cup desiccated coconut

½ cup hulled hemp seeds

½ cup hazelnuts (soak overnight)

1 dessertspoon lucuma (optional)

Pinch vanilla powder / couple drops vanilla essence (make sure there’s no sugar added)

Water – enough to turn mixture into a dough.

Method:

1. Pre-heat oven to 150 degrees C - unless you have a dehyrdator, which is an even better option!  They can also be eaten raw.

2. Place all the ingredients (except the water) into a blender and wiz until it turns into a flour consistency.  Then slowly add water to turn it into a dough.

3. Take out a dessertspoon at a time of the mixture and shape in your hands to form a biscuit shape.  Place onto a tray lined with greaseproof paper.

4. Place in the oven and cook for approximately 30 minutes – until golden brown.

Popeye Smoothie

Protein Power Smoothie

  • 1 cup Coconut Water (you can buy this from most health food shops and some supermarkets, you can also replace this with milk or a milk alternative)
  • 1 cup berries of your choice
  • 1 handful spinach
  • 1 dsp natural yogurt
  • 1 dsp hemp protein
  • 1 dsp hemp seeds
  • 1 dsp flax oil or coconut oil (great for the metabolism!)
  • 1 teaspoon supergreens

Blend all the ingredients together.

Raw Purple Special Cake

Raw Purple Special Cake

12 - 14 Slices

This cake tastes wonderful. Looks like chocolate but in fact contains no cacao products at all! The purple corn gives it its wonderful dark colour and a mildly fruity flavour, the cashews the gentle nutty part, the Lucuma adds the delicious dreamy, creamy bit and the Berrylicious just that special tang of berries. The combination has the wow factor!

 

Ingredients:

For the cake:

200 organic Chiray cashew nuts - preferably soaked for 2 hours

150g Chiray sunflower seeds - preferably soaked for 2 hours

100g oat flakes

150g raisins (preferably without sunflower oil coating)

150 sultanas (preferably without sunflower oil coating)

75g Chiray organic purple corn flour

75g Chiray organic Lucuma powder

75g Chiray cold pressed, organic coconut butter

1 tablespoon Chiray Berrylicious

Pinch of fine Chiray Himalayan salt

A large amount of love and kindness!

 

For the Icing:

75g Chiray  cold pressed, organic coconut butter

40g Chiray  organic Lucuma powder

4 level teaspoons Chiray  purple corn extract 

 

Method:

1. Rinse cashews and sunflower seeds, put into a food processor or blender and process until all of the ingredients are broken down - you may have to do half at a time depending on the strength of your mixer - and then tip the mixture into a large bowl.

2. Next process the oats, raisins and sultanas until they are broken down and well mixed - you may have to do this in halves also - and put into the bowl with the processed almonds and seeds. Mix together with your hands until they are spread evenly. You should start to have a stiff dough consistency

3. Melt the coconut butter in a bowl standing in hot water.

4. Mix the Lucuma powder, purple corn flour, Berrylicious, and salt into the melted coconut butter and stir to form a paste 

5. Add the paste to the mixture in the large bowl and continue mixing with your hands until the whole mixture is a uniform colour, and makes a sticky dough.

6. Firmly press the mixture into a dish, tin or mould. A silicon mould works particularly well. 

7. Refrigerate for a couple of hours

8. Turn out of mould onto decorative plate

9. To ice, lightly soften the coconut butter as before until it is soft but not completely liquid, by gently warming and then beating. Add the Lucuma powder and purple corn extract and mix together.

10. Pour icing over cake and decorate using Goji berries, cacao nibs, desiccated coconut or any other healthy delicious artistic raw food.

11. Store in a sealed container in the fridge for up to a week.

 

Definitely a rich cake for when you feel like spoiling yourself (or friends). It can also be served as a desert with yoghurt, cream and berries. Start with small slices - you can always come back for more!

 

 

Savoury Superfood Flan

Savoury Superfood Cheese Flan Base

For 4 - 6 people

 

Ingredients:

¾  cup Chiray brazil nuts - preferably soak for a few hours

2 tablespoons Chiray hemp seeds - preferably soak for a few hours

½ cup Chiray sunflower seeds - preferably soak for a few hours

½ cup Chiray pumpkin seeds - preferably soak for a few hours

½ cup oats

2 tablespoon Chiray Supergreen mix

½ teaspoon salt

1 crushed clove of garlic

50g grated cheese

2 tablespoons Chiray coconut oil

 

Method:

1. If you have soaked the nuts and seeds rinse and put in blender/processor and blitz until well mixed. If not just place all dry nuts and seeds in blender/processor and blitz. Tip these into a large mixing bowl. 

2. Place the oats, super green mix , salt, garlic and coconut oil (broken into small pieces suitable for the blender) and blitz until well mixed. Put this in the bowl with the nuts and seeds. 

3. Add the grated cheese and mix all the ingredients together with your  hands until you have a firm dough ball.

4. Press this firmly into a flan dish or mould and place in the fridge to set preferably a couple of hours.

Serving suggestions

 

Complete your savoury flan with a filling of your choice. One we particularly like is the Savoury Celery and Pepper (see recipe below).

 

Raw savoury flans are a very tasty alternative to quiche. Serve with a fresh salad

 

Savoury Celery and Green Pepper flan filling

For 4 - 6 People

 

Ingredients:

3 Avocados

4 Sticks Celery

1 Green Pepper

2 crushed cloves of garlic

1 tablespoon Chiray super green mix

60g Chiray coconut oil

½ teaspoon Chiray Himalayan Salt 

Juice of ½ lemon 

¼ medium size onion optional

Small bunch coriander       

 

Method:

1. Put flesh of avocados in blender/processor

2. Wash and deseed pepper and cut into pieces suitable for your blender

3. Wash and “string” celery and cut into pieces that your blender can cope with.

4. Add onion

5. Add garlic, salt, Chiray Super Green Mix, lemon and washed coriander to blender.

6. Melt coconut oil in a bowl over a bowl of hot water or break into small pieces and add.

7. Blitz until mixture is thick and creamy.

8. Pour onto flan base of your choice and chill for preferably 2 hours.

 

Decorating suggestions:

Chopped chives, Chopped parsley, Thin Cucumber slices

 

Savoury flans are a tasty alternative to quiche. Put this topping on 

another nutritious raw recipe, “savoury cheese flan base” and serve with a fresh salad.

 

 

Seaweed Salad

Serves 2

Ingredients:

4 tablespoons dried seaweed / a handful  e.g. sea spaghetti or kelp – soak in water until rehydrated.

1 tablespoon goji berries – soaked in waterto rehydrate

½ yellow pepper – chopped into small pieces

1 tablespoon hemp seeds

1 - 2 tablespoons roasted sesame oil / olive oil / hemp oil

1 tablespoon soya sauce

Juice of 1/2 lime

 

Method:

Mix all the ingredients together in a bowl - it's that easy!!

Strawberry Maca-ri

Ingredients:

2 handfuls strawberries

1 teaspoon Berrylicious

2 dessertspoons hulled hemp seeds

1tsp – 1 heaped dessertspoon of maca

Coconut water (amount depends on desired thickness)

2 dessertspoons natural yogurt

Pinch vanilla powder / couple drops vanilla essence


Blitz all the ingredients together in a blender and serve in a martini glass!

Super Charge Porridge

Serves 1
GL Score: approximately 7 GL without the fruit, 9 GL with the fruit

Ingredients:
 

 

• 60g porridge oats

• 1 teaspoon cinnamon 

• 1 tsp Lucuma (optional but yummy!)

• 1 dessertspoon desiccated coconut

• sprinkling of nutmeg and powdered ginger (optional)

• handful almonds - chopped

• 2 tsp sunflower, pumpkin or hemp seeds

• 1 teaspoon bee pollen (optional but helps to supercharge your porridge!)

• Approximately 250ml cow’s or goats milk (avoid skimmed - yes really!) / coconut milk / soya milk / rice milk / oat milk 

• Small handful of berries (soaked goji berries would be particuarly good - just soak for at least an hour prior to eating) or half a grated apple 

• 1 dessertspoonful of natural yogurt

 

 

N.b. you may need to add a little water if you like your porridge more runny

 

Method:

Place the porridge into a pan with a mixture of milk and some water if required.  Add the cinnamon, Lucuma, nutmeg, ginger and coconut.

Simmer until cooked and the right consistency.

Mix in remaining ingredients, eat!

Ingredients:

3 dessertspoons hemp seeds

1/3  cucumber

2 pears

½ avocado

Big handful spinach

2 teaspoons Supergreens or green powders

Juice 1 lime

1 ½ cups water / coconut water

1 dessertspoon coconut oil – melted.  An easy way to melt coconut oil is to put it into a cup and then place the cup into a bowl of hot water.  It only takes a few minutes to melt.

 

Place all the ingredients into a blender and blend until smooth.

Spicy Red Garnish

Serves 4 – 6 people

Takes just 10 minutes!

 

Ingredients:

1 red pepper

1 cup Chiray Goji Berries

1 tbsp lemon juice or 2 tbsp cider vinegar

2 cloves garlic – crushed

½ tsp Chiray Himalayan rock salt

¼ red chilli – this is optional add more or less depending on how hot you like it!

 

Method:

1. Wash, deseed and roughly chop the pepper and chilli and place in your blender/processor.  Add the Goji berries and blitz until well mixed.

2. Add the other ingredients and blitz until you have a wonderful red mixture.

 

Serving Suggestions:

Serve as a topping for wheat-free pasta or as an accompaniment to any savoury dish.
